Before I share this recipe, yes I do use shortcuts. I just wanna stress to vegans and those with food allergies, READ THE BOX EACH AND EVERY TIME. Companies change the recipes to their products all the time, your former favorite packaged food may now contain something eggs or dairy.
Red Velvet Whoopie Pies
For the pies:
1 box red velvet cake mix
1 ener-g egg (This is found in any natural food store, it lasts forever and well worth the price, especially if you are a baker)
1 stick margarine or 1/2 cup butter or substitute, melted
For the filling:
1 package vanilla frosting
1 package Tofutti cream cheeze
First mix up egg in a large mixing bowl. Then take a large wooden spoon and add in the cake mix and melted margarine. Mix well then set in fridge for 15-30 minutes. I chill it to make the dough easier to work with. Preheat the oven to 350 degrees and line ungreased cookie sheets with similar sized circle. The cookies will expand, so make sure to keep enough space for them to spread. Bake each batch for 8-10 minutes and do the toothpick/fork test (which just means poke a cookie, if the fork comes out clean, it’s done). Let cool completely before assembling pies.
For the frosting, place both the frosting and the cream cheeze in a mixing bowl and beat til smoth with an electric mixer.
Enjoy! After you’ve made these once, you’ll want to make them for every party.
